The ingredients:
1 onion
2-4 garlic cloves
1 tablespoon peeled ginger
2 potatoes
4 carrots
1 leek
about 2 cups chopped pumpkin (half of what's in the picture)
optional: soy cream
The recipe:
- Roughly chop the vegetables and place them in a large pot with just enough water to cover the vegetables. Bring to a boil and add 1/2 teaspoon course salt.
- Boil for about 10 minutes, or until vegetables are tender. Puree with a handheld blender.
- Add cream and salt if needed. Drizzle on a little olive oil.
